The project I am interested in has only land owner's share available. Is it safe to go ahead with the apartment purchase or should I drop it?

Buying any property in Bangalore comes with it risks. It doesn't really matter whether you are buying the property from the land-owner's share or the builder's share. What does matter though is whether all the property documents are in order. I would strongly recommend availing the services of an experienced property lawyer in Bangalore. They will verify the property documents and ascertain whether the land-owner has clear and marketable title over the property.
